   We’ve leftover meatloaf for sandwiches tonight. Bacon’s nothing.

   The spousal unit went nuts and instead of bread crumbs, she took a bunch of “Hot Mustard Doritos” mashed up and put ‘em the meatloaf. Definitely different. Maybe one of the “Flaming” something or other next time.

      I have never understood the concept of a meatloaf sandwich.

         Well, simple concept. It’s like a congealed hamburger patty wedged, one might even say “sandwiched” between two pieces of bread.

         But try this. Thin, thin, thin layer of cream cheese (use whipped) with 8 to 10 slices of cucumber, thin sliced tomato, little salt, little black pepper, and… and this is the kicker… Stone Wall Kitchen truffle aioli.

         Cucumber sandwiches are really good and meatless.
